Go(ji) Coconuts for these Overnight Oats

I'm SO digging the wonderful breakfast world of overnight oats! Yuuuuummmm. For many reasons overnight oats makes the perfect mid-week breakfast:
It's totally filling, so you won't experience hunger pains in your a.m. meeting
There is minimal prep time required; so you can handle this half asleep
There is unlimited combinations to make, so you're never bored!
Recently I've been experimenting in the kitchen adding different nuts and dried fruit to my overnight oats - that is, until I stumbled upon this magnificent combination: Coconut, goji berries, and dates! OH MY! I just about went crazy after my first bite into this delectable blend; it was like fireworks in my mouth! The creaminess, sweetness and crunch of these overnight oats is all consuming. I've been making this fail proof combination ever since. And I have yet to tire from it! It's just too good for my own good.... to the point where I'm excited for bed because it means I'm that much closer to waking up and indulging in this beautiful bowl of overnight oats! (I know - I totally need a therapist for my food addiction...).
But really, this recipe is so important for me to share because it's an easy fail-proof breakfast recipe that is too good to keep secret. And not only is it super quick to put together in the morning, but it's so healthy! Of course, the ingredients consist of whole foods like large flake oats, nuts, seeds and dried fruit, but the piece de resistance is the goji berries! This sweet and tart little superfood is one of the most phytonutrient packed dried fruits you can find! And is known to protect against a whole host of diseases including cancer. They also contain all 8 of the essential amino acids, and are insanely high in vitamin A and C. Can you believe this little fruit can do all that?! Honestly, you won't believe how healthy this tasty dried fruit is given how delicious they are in this overnight oats recipe.
The only "do-ahead" step required to perfecting this bowl is to soak your oats! Soak the oats, chia and flaxseeds in coconut milk before you to go bed. These ingredients need time to absorb the milk to become thick and creamy; so that you can wake up to a beautiful base of overnights oats. Then, simply dress for success! Add the dried fruits and nuts and you've hit next level glory. You will be hugging yourself for spending those 30 second the night before to soak your oats.

Go(ji) Coconuts Overnight Oats!
Serves: 1 | Prep Time: 5 mins | Cook Time: 0 mins
Ingredients:
1/4 cup large flake oats
1 tsp chia seeds
1 tsp ground flaxseed
1/2 cup unsweetened coconut milk (Silk, makes a good version)
1-2 tsp maple syrup
pinch cinnamon
pinch salt
1 medjool date (chopped)
1 tbsp goji berries
1 tsp sunflower seeds
1 tsp coconut flakes
Directions:
The night before: add your oats, chia seeds, and ground flaxseed to your breakfast bowl. Pour in coconut milk and stir. Next, add your maple syrup and a pinch of cinnamon and salt. Mix again and set in the fridge overnight.
In the morning remove the overnight oats from fridge and stir. Sprinkle with 1 chopped medjool date, goji berries, sunflower seeds and coconut flakes. If desired, top with a splash more of coconut milk.
