Coconut Yogurt Parfait

Hey friends! Happy...Monday? Ugh, I just said the dreaded M word!

As we all know, Monday's are S.A.V.A.G.E. The weekend has sadly just ended, we have an inbox piled high with requests, and it feels like lightyears away from being Friday again. But, I come bearing gifts! Or better yet, a delicious coconut cracked in half and stuffed with Coconut Yogurt Parfaits! This parfait is a simple vegan breakfast recipe, using coconut yogurt, summer fruits, and my homemade detox granola, for a light and bright summer breaky!

(Don't worry, you can forgo the coconut bowl).

Let's be honest - What to have for breakfast is the last thing we want to worry about as we start the work week. The dilemma seams menial as we sift through 200 emails while brushing our teeth; all to make sure there's nothing missed for that 8 a.m. meeting. Who said anything about work life balance - Monday's are all about multitasking!

But let's not forget - a good day starts with a good breakfast. Whether it's a weekend brunch with friends, or at your desktop prepping for your morning meeting. Which is exactly why I love opting in for this coconut parfait. It's just three simple ingredients; and it's going to make your Monday morning much more palatable.

If you haven't tried my detox granola recipe you are in for a treat! I absolutely love this detox granola because it's so clean. A lot of store bought granolas are calorie dense and loaded with sugar. Which is a total bummer because granola is supposed to be healthy! When you make it homemade, however, you know exactly what's gone into it so you can eat with ease.

This detox granola is made with nuts, seeds, coconut flakes and oats, and mixed with just enough oil and sweetener that it's still healthy but hella tasty. I've added some lovely spices to the mix - like cinnamon, cardamom and cloves. It takes this granola to a whole new level of delish. It's also quick and easy to make - taking a few minutes to toss the ingredients together and then place in the oven. I like to make this granola on the weekends so it's ready for me throughout the week. Plus, the inviting smell of sweet roasted granola that fills your home is just the icing on the cake (or should we say the granola on your yogurt?). It's sweet, and inviting, and will have you feeling like a modern day Martha. Get ready to wave the granola aisle goodbye at the grocery store, because this granola is going to be your go to.

But, if you don't have the time to make your own granola don't you worry! You can always opt in for store bought granola. My tip for making a healthier choice when buying store bought granola is to look for blends that have 6g of sugar or less per serving. This was a tip given to me by my nutritionist a few years ago, and it's always stuck with me. I keep this in mind for all store bought snacks, not just granola.

To top this parfait I've used fresh white flesh peaches and cherries - because they are premium ATM. Of course you can use any fruits you fancy. The best part about summer is the variety of choice we have on hand - so make the most of it. My favourite combos are peaches and cherries, a berry blend, or a tropical mix of pineapple and passionfruit. The best part about parfaits is VARIETY! Switching up the fruits during the work week will make your parfait something to always look forward to.

So although it's Monday, and we can't just ghost our colleagues, this lush coconut yogurt parfait is going to see you through. Time to take a hold of Monday like the boss babe you are!

 

Coconut Yogurt Parfait with Detox Granola

 

Serves: 2 | Prep Time: 10 mins ( +25 minutes if making detox granola)| Cook Time: 0 mins

 

Ingredients:

  • 1 cup (250ml) coconut yogurt, or other vegan yogurt

  • 1/2 cup detox granola (see recipe/ingredients below), or granola of choice

  • 2 peaches, sliced

  • 1/3 cup cherries, halved, pits removed

For the Detox Granola:

  • 1 cup (160g) almonds

  • 2 cups (240g) + 1 cup (120g) gluten-free oats

  • 1/2 cup pumpkin seeds

  • 1/3 cup shredded coconut

  • 1/3 cup flaxseed

  • 1 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1/4 tsp ground cardamon

  • 1/2 tsp sea salt

  • 1/3 cup + 1 tbsp coconut oil

  • 1/3 cup + 2 tbsp agave

Directions:

  1. To make Detox Granola: Preheat oven to 250F/180C. In a food processor blend almonds and 2 cups oats until they are finely ground. Add to a mixing bowl with remaining 1 cup of oats, pumpkin seeds, shredded coconut, flaxseed, cinnamon, cloves, cardamon, and sea salt. Mix to combine. In a saucepan melt coconut oil, then add to mixing bowl along with agave and stir granola to combine. Line a baking sheet with parchment paper. Pour granola into baking sheet, and spread evenly. Bake for 20-25 minutes, or until golden. (I recommend to rotate pan halfway through baking to ensure it's baked evenly). Let cool completely.

  2. For the parfaits: Divide 1 cup coconut yogurt between two bowls. Top with detox granola, freshly sliced peaches, and cherries.
