Blackberry Yogurt Parfait

Hello everyone! I am back from the magical city of Berlin! What a trip it was. Berlin is such a vibrant city with so much history and plant-based food. We had such a blast. But now I'm home, and here to bring you what perfectly described my vacay; parfait!

This Blackberry Yogurt Parfait was one I created the day before going to Berlin, actually. Being so busy with packing my bags, and getting work and my blog in order, I wanted to create something that was quick, easy and delicious! Which is of course what perfectly describes this pretty parfait.

Of course, sharing a blackberry recipe was a must, given they are so ripe and juicy at the moment. I can't believe it's already September and we will soon have to say goodbye to all our berry fruits! But the transition in seasons that we are experiencing right now; being the end of summer and beginning of fall, brings so many beautiful fruits like bursting blackberries and figs. Which are my favourites! So I can promise you I'll be taking full advantage of using them in my recipes whilst they are around.

As I mentioned, this recipe is the definition of quick and simple. My husband knows that I'm blackberry obsessed and has been buying punnets by the dozen. So before leaving for Berlin I had enough blackberries to feed a small army. They literally filled up a whole section of our fridge. Which I was completely content with of course. The only catch is that these sweet berries are short lived, only lasting a few days before going bad, so they had to be consumed quickly. This parfait proved to be the perfect solution. Taking advantage of those sad looking berries and giving them new life.

To create the blackberry compote I muddled the softer blackberries in a bowl using a fork to create a sort of blackberry jam. Then I added a little bit of agave to sweeten them more. After that I transferred the blackberry jam into jars with soy yogurt, and topped with granola and dark chocolate chunks! The combination was bliss. And so easy to create! Had the berries been a little bit tougher, I would have simmered the blackberries in a saucepan to thicken it like jam; just like how I did in my Raspberry and Apricot Parfaits. But, because my blackberries were already so soft and juicy it didn't seem necessary.

All-in-all this blackberry yogurt parfait is a wonderful way to enjoy our blackberry season, especially the ones that are looking past their prime. The muddled blackberry jam gives the berries a longer life by a day or two, which is a precious gift. Heaven forbid those precious berries get fed to the trash. They seem much better suited for my tummy!

That's all there is to say about this simple dish. Except that I do hope you'll give it a try. Enjoy every blissful bite of this easy peasy recipe!

 

Blackberry Yogurt Parfait

 

Serves: 2 | Prep Time: 10 mins| Cook Time: 0 mins

 

Ingredients:

  • 1/2 cup (40g) blackberries

  • agave for sweetening, if needed

  • 1 cup (250ml) soy yogurt, or other vegan yogurt

  • more blackberries for topping

  • dark chocolate chunks, for topping

  • gluten-free granola, to sprinkle

Directions:

  1. Place blackberries in bowl and muddle with a fork until jammy in texture. (Optional to pour into saucepan and simmer for approx. 20 minutes to thicken - if desired). Add agave to sweeten to taste.

  2. Scoop jammy blackberries into two jars and top with yogurt, fresh blackberries, dark chocolate chunks and gluten-free granola.
