Chocolate Pistachio Crunch Nice Cream

You can't go on instagram these days without being surrounded by BIG delicious bowls of Nice Cream! Each morning these bowls flood my feed with tantalizing combinations that's got my head swirling in the vortex of raspberry, chocolate chips and ooey-gooey peanut butter swirls. These bowls can gladly whisk me away to an alternate universe of nice-cream deliciousness. And I'll take the front row seat! I'm telling you, these nice cream insta posts is an insight into heaven. And they receive so many mouthwatering comments from drooling scrollers like me! So it got me thinking - WHY haven't I blogged this yet!?
If you haven't yet been introduced to the new fad-food it's time to get out from under that rock and enter into the glorious swirly vortex of cruelty-free ice-cream! Or, as it's better referred to "Nice-cream!" This wondergood dessert is made of frozen bananas and you can pretty much combine it with whatever your heart desires, swirl it together with a food processor and VIOLA! You have a soft and creamy ice-cream that will change your life forever.
But don't feel too bad if you haven't tried this delicious dessert yet, because I have no soap box to stand on. Literally, I've been trying to make nice cream for MONTHS now! But I've had one very big set-back in my endeavour...MY HUSBAND LOVES BANANAS! So every time I've bought an extra bunch in hopes to freeze and blog a delectable bowl of nice cream the banana monster has beat me to it!
Enter a day in the life of my husband:
Wake up, make a smoothie, add a banana
Get ready for work, pack a banana for mid-day snack
Sneak back into the kitchen before bed, peel banana and dip it into giant jar of nutella before wife catches you.
So it's safe to say (in addition to my daily-banana needs - I can't point the blame entirely on Mitch) that we go through a LOT. But finally, I was able to gage how many bananas I needed to buy in order for them to go brown and spend a night in the freezer. I believe the magic number was 16! (Please don't judge). So finally, last weekend was game day - the moment I had been eagerly anticipating. I pulled out the frozen bananas that I had chopped and peeled the night before, and my trusty food processor. Next, I tossed in all the ingredients and pushed blend. Next thing you know I was gazing into the god-like dessert; a beautiful, smooth, soft-serve bowl of nice cream. That was entirely vegan and healthy too!
I must say. This combination of chocolate and pistachio is glorious! Let's be honest, you can never go wrong with chocolate, and I get weak in the knees for anything with a nutty crunch. So naturally I had to make this decadent Chocolate Pistachio Crunch Nice Cream. And not only did I love it, but my husband went berserk for it too! Both of us couldn't even form words, except to "Mmmm" and "ooh my gaaaad" after every other bite until it was sadly over.
And ever since Mitch has been making a conscious decision not to eat all the fresh bananas, in hopes I'll whip up another bowl of this decadent dessert. Step aside banana and nutella, theres a new guilty pleasure in town.




Chocolate Pistachio Crunch Nice Cream
Serves: 2 | Prep Time: 10-15 mins | Cook Time: 0 mins
Ingredients:
1/4 cup pistachios (plus more for topping)
2-3 large frozen bananas (chopped)
2 tbsp cocoa powder
1/2 tsp vanilla
1/4 tsp cinnamon
1 tbsp maple syrup
1/4 cup almond milk
pinch sea salt
For the topping:
crushed pistachios
vegan dark chocolate shavings
1 fresh banana (chopped)
Directions:
Begin by adding your pistachios to your food processor. Pulse 5-6 times, or until chopped.
Add your frozen bananas, cocoa powder, vanilla, cinnamon, maple syrup, pinch of salt and almond milk.
Blend in food processor on low. Stop every few minutes to open the lid and scrape down the sides. Blend until smooth (approx. 5-7 minutes).
Scoop nice cream into bowls and sprinkle with crushed pistachios, dark chocolate shavings and fresh chopped banana.
