Avocado Toast w/ Savoury Spiced Chickpeas

What to do with all those chickpeas? Make Chickpea Toast!

In my last blog post I gave a quick & easy recipe for Pan Fried Spiced Chickpeas. And let me tell you - they are delish! Check it out of you haven't already. And if you have made them and are wondering what to do with 2 1/2 cups of these babies (apart from grabbing a spoon and devouring them - because I'm living proof that can happen); I wanted to share this ultra quick and delicious Avocado Toast with Savoury Spiced Chickpeas. It is heaven!

If you haven't noticed that Avocado Toast is flooding your instagram account over the past year it's time to wake up and smell the...well...toast! And it makes sense because avocado toast is divine! Really, it's way too delicious considering how easy it is to make. You simply toast some bread, mash avocado on top, sprinkle with salt and viola; welcome to euphoria. But savory spiced chickpeas takes avo toast to the next level; in just one easy step! Just top that avo toast with these Pan-Fried Spiced Chickpeas and it goes from euphoric to sheer ecstasy. If you look hard enough you might see the yellow halo circling around this scrumptious toast. Another bonus - the chickpeas give that extra protein boost which makes it perfect for a filling breaky or lunch.
