Risotto; it's like therapy in a bowl. And so much cheaper! There is nothing I love more than diving into this creamy Wild Mushroom Risotto after a hard day's work. The sight, the smell, the taste. It's a total mood booster that's got me swimming in euphoria! Yup, even reminiscing about this delectable dish just boosted my mood +10 points!
I AM A BIG FAN OF RISOTTO and will order it on any possible occasion. If it's on the menu you know it has my name on it. In just a few weeks I will be celebrating my wedding day (wahoo!) and of course I've got a beautiful bowl of Wild Mushroom Risotto on the menu. I can picture it now.... a magical midsummer night in the South of France, sitting down to dinner with my closest friends and family, the fairy lights twinkling overhead, and finally a deliciously warm bowl of wild mushroom risotto being set down right before my eyes. That.is.the.ultimate.DREAM! (Oh, and the getting married part too! hehe).
However, I feel as though risotto sometimes get's a bad wrap...Have you noticed this? In fact, my favourite dish has been described to me by some as "...just a bowl of rice."
Waaaahhh!? How can that be?!
Risotto is sooOoOoooo much more than just a bowl of rice. It's basking in rich, thick, and creamy flavours; infused with garlic, cheese, and truffle oil. It oozes with royalty status! And is everything you'd hope for in a mouth-watering gourmet dish. Just a bowl of rice? It can't possibly be! There must be some mistake....
And so I've decided to post this Wild Mushroom Risotto recipe as proof that risotto is so much more than just a bowl of rice. And this one is even vegan! Sit back and enjoy this creamy dish, combined with gorgeous chanterelle mushrooms, infused with garlic, and drizzled with truffle oil. As for the cheese? I've added nutritional yeast for the beautiful parmy flavour we all know and love. It's wondrous! But if you prefer, feel free to change it to parmesan cheese if you are not strictly vegan.
I hope this recipe will prove just how delicious a bowl of risotto can can be! And for those who still think it's just a bowl of rice? ...."What's wrong with a bowl of rice?" ;)



Dreamy & Creamy Wild Mushroom Risotto
Serves: 4 | Prep Time: 10 mins | Cook Time: 40 mins.
Ingredients:
1 white onion
2 cloves garlic
1 tbsp coconut oil
1 cup alborio rice
100g mushrooms
2 cups vegetable stock (plus extra)
1/2 cup nutritional yeast
salt
truffle oil
Directions:
Chop onion and finely chop garlic, add to saucepan
Add coconut oil and bring saucepan to medium heat. Add pinch of salt.
Stir veg until onion becomes translucent (approx. 10 minutes).
Toss in arborio rice and mushrooms.
Toast rice until it begins to go opaque in colour (aprox. 10 minutes). Make sure to stir occasionally to it stop from burning.
Add two cups of vegetable broth and the bring rice to a simmer. Season with salt and pepper.
Cover with lid and simmer rice for 20 minutes or as instructed on the box.
Check every few minutes and add splashes of stock or water as needed (for desired creamy consistency).
When cooked remove lid. Add nutritional yeast and more salt and pepper. Stir to combine.
Serve drizzled with truffle oil
