Holiday Berry Yogurt Parfait

Take a look at this Holiday Berry Yogurt Parfait! We are T-minus 1 days to December and the countdown is ON! So here is a pretty parfait, if I do say so myself, to get the Christmas ball rolling. It is so festive, and so easy to throw together (okay, I know I'm always saying that, but it's really true!).

The recipe is perfect for December too, because it makes the best of frozen berries. Here I've displayed frozen red and black cherries, with frozen raspberries, and also added some fresh kiwi, pomegranate and mint. Personally, I love the flavour and texture of frozen berries, especially as they thaw. They turn into these sweet, jammy, and oozy berries that are like a dessert. And let's be honest, there's no point in buying your berries fresh at this time of year, since they'll cost you an arm and a leg. Plus, we can only assume they've come from far away and are most certainly jet lagged. Imagine being told you have to run a marathon after travelling across an ocean for 5 days. Ugh, you'd be way too exhausted! That's most definitely how those berries are feeling when they arrive on your plate. But that doesn't mean we can't enjoy berries in the winter. If you're anything like me you yearn for berries all year long. This is why the frozen versions are perfect for this time of year. They are picked in the summer when in season, and frozen right away, so the berries are able to keep their nutritional properties and perform their best to give you that nutrient boost you're looking for.

To decorate the yogurt, I've sprinkled the fruits across the dish crowding them close to each other, like how I would top a pizza. I've then sprinkled it with some fresh mint for some green, and pomegranate seeds. I love how the pomegranates look like little jewels. They're so pretty. Plus they add a nice crunch to the parfait.

I also love the look of this plated yogurt to really dress up this festive dish! I mean, don't get me wrong, it all tastes the same going down, whether in a bowl or spread on a plate. But spreading some thick yogurt across a beautiful plate gives it that extra classy look, making it go from blaze to gourmet in no time. You just can't replicate that gourmet look with a bowl. Dressing the plate is definitely the fun part of the dish. So go ahead and get creative, no two dishes will ever look the same. Also, don't worry if the berries thaw a bit onto the plate as you decorate. You can see mine have too. It merely adds a sweet juice to the yogurt that is divine.

Holiday Berry Yogurt Parfait

 

Serves: 1 | Prep Time: 5 mins| Cook Time: 0 mins

 

Ingredients:

  • 1/2 cup soy yogurt

  • 1 kiwi, peeled and chopped

  • 1/3 cup frozen cherries (red and black), more or less

  • 1/3 cup frozen raspberries, more or less

  • 1/4 cup (40g) pomegranate seeds, more or less

  • fresh mint, chopped, to sprinkle

  • honey or maple syrup, to drizzle (optional)

Directions:

  1. Scoop soy yogurt into the middle of a plate. Using the back of the spoon swirl it outwards to flatten into the shape of a round disk.

  2. Decorate the yogurt with chopped kiwi, frozen cherries, and frozen raspberries. Don't be afraid to crowd the fruits close together, like how you would top a pizza. (It gives a very pretty styling effect). Sprinkle the plate with pomegranate seeds and mint. Optional to drizzle with some honey or maple syrup.
