Chocolate Chia Pudding

Hi Friends! This is a recipe for a DELICIOUS Chocolate Chia Pudding I made the other day. I planned on gifting this to hubby, because I had shot it mid day after already having lunch and my mid-day snack. So, I thought I would leave it for Mitch to eat when he came home. He LOVES chocolate pudding and I figured it an easy way to score some wifey points.

Well, my intentions were pure... But in reality, after shooting this pretty bowl I gobbled up this Chocolate Chia pudding faster that a puppy over spilled kibble! Part of me wonders whether I subconsciously felt like the faster I ate it, the more it feel like it never happened. And I don't know if it's worse that I didn't even feel guilty about it. It was SOOO good! If i've learned anything it's that next time I should make two bowls. One for me, and the other for....me again!

The flavours in this Chocolate Chia Pudding are irresistibly decadent! Combining chia and homemade almond milk with cocoa powder and maple syrup. Then topping with kiwi berries (how cute are they?!), chocolate bliss balls, chopped banana, chocolate granola and chocolate shavings. Yuuu-uuuummm! This is a chocolate lovers delight. Each bite was intoxicating from beginning to end.

I want to quickly tell you about these kiwi berries I used in decorating this bowl. I don't know if you've ever tried them before, but for me it was a first. I've seen them flooding my Instagram feed and was just enamoured by how small and cute they were. A quick google search told me that they are grown in FRANCE! Can you believe it?! Almost two years I've been living here and have never seen a kiwi berry. Then, the other day I was at the market and found them at a bio vendor in one of their baskets. They come on this stick, which you pull the berries off like a tiny apple tree. Here's a pic. I wasn't even quite sure if it was actually the kiwi berry, as it looked so different on the stick from what I had imagined. I was sort of staring at it them in wonderment thinking "are these them!?" Anyways, I bought a couple sticks worth, not even knowing how they tasted, but I was just so curious. It turns out they are DIVINE. They hardly made it into my bowl because I couldn't stop popping them in my mouth (do you see a trend here? I have no will power!). The taste is so sweet! Much sweeter than a kiwi I would say. And you can eat the skin. And I love anything that required less steps before ingesting. hehe.

But, regardless of whether you can find kiwi berries or not, you can still make this delicious pudding with regular kiwis. As you can see I've added 1/2 a regular kiwi to this bowl as well (because the more fruit the better). I love the kiwi/chocolate taste combo.It's sweet and citrus combined with rich and chocolaty. I wonder why chocolate/orange get's all the praise because chocolate/kiwi is a delight!

But, I hope you can try out this easy and decadent chocolate chia pudding. It is wonder good! And if I can give you any advice - best to make three bowls. One for hubby, and two for you! ;)

 

Chocolate Chia Pudding

 

Serves: 2 | Prep Time: Overnight + 10 mins| Cook Time: 0 mins

 

Ingredients:

Directions:

  1. In a bowl combine chia and homemade almond milk. Stir to combine, wait 10 minutes and stir again to avoid any clumps from forming. Let soak for 1-2 hours, or overnight in fridge.

  2. When ready to serve remove from fridge and stir again to remove any formed clumps. Add cocoa powder and stir to combine. Then add maple syrup to taste (depending on how sweet you like it).

  3. Pour chia pudding into breakfast bowls and decorate with kiwi, kiwi berries and chopped banana. (To make the kiwi flower design: cut into the middle of a kiwi in a zig-zag pattern all the way around, with a sharp knife. Pull apart and you have two kiwi flowers.) Finish decorating pudding with chocolate peanut truffle balls, chocolate granola and shaved dark chocolate to sprinkle.

Note: Homemade almond milk will keep in fridge for up to 5 days. Enjoy in coffee, lattes, overnight oats and chia pudding.
