Red, Green and Clean Buddha Bowl

You might know that I have a long lasting love for clean and green buddha bowls! Swing by my flat at 12 noon and you'll find me on lunch break with the biggest salad bowl you've ever seen! Look inside and you'll see an abundant mix of rice, salad greens, tomatoes, avocado, beetroot, chickpeas, nuts and whatever other veg I could find that day!
My love for clean and green bowls has coined me amongst my family and friends as the girl who eats like a rabbit. Honestly, I've heard this too many times to keep track! And I have often been told by my loving mother at diner, as I sit with my plate pilled high with greens, that she can see my floppy ears coming in. And after many years of this humble title I've decided to embrace it. Because, well, it's sort of true! I love healthy and nutrient rich buddha bowls! And if that makes me a rabbit than so be it!
I'll tell you why this love for greens is so strong: There is something about eating clean and green that makes you feel SO good. For lunch, the most important meal of the day if you ask me, buddha bowls are my go to! After eating a big and crunchy buddha bowl I feel full and refreshed. There is no bloating, sugar crashing, or hunger pains come the late-afternoon. And I feel HEALTHY! Which to me is the best part of all; I truly believe that feeling good about what we eat has such a positive influence on our minds and body. Nothing makes me feel like I have more energy, gives me a positive attitude and outlook on my tasks at hand, and keeps me staying healthy for the rest of the day than a big healthful buddha bowl. It makes me feel like I can take on the world! I swear, if was a superhero these buddha bowls would be my source of fuel!
Now, I want to get rid of the typical misconception that many of us have about healthy green recipes: which is that they're boring and have no taste. By no means do you need to compromise on taste just because it's healthy! I think too often we associate healthy food as "diet food." I'm not a believer of dieting - I don't think it works, and I don't think it's a fulfilling way of life to focus on all the foods you can't eat in order loose X number of pounds on the scale. That to me is not healthy. I've seen friends and family on diets where all they can eat is a cup of steamed spinach with lemon juice every evening for a month. So it's no wonder they think the don't like greens! And you've no idea how many times I've ordered a salad at a restaurant to receive the most bland bowl of limp leaves you ever did see. So I'm not surprised many people feel this way about greens. But, I promise you, healthy does not mean it needs to be short on taste, flavour, and variety. And healthy is not a synonym for diet-food. Healthy is a lifestyle, and it's delicious and fulfilling! And this Buddha Bowls is here to prove it.
The base of this buddha bowl is half red rice and half salad greens. I've then topped it with fresh green peas, cucumber, avocado, red currants, and chickpeas. For some additional freshness and flavour I've added cilantro and chives, and then I've drizzled it with a simple dijon vinaigrette, and cracked over lots of sea salt and pepper. The outcome: satiating, full of flavour and delicious! I love how the rice and chickpeas fills this buddha bowl of protein to keep us satiated, and the whole spectrum of taste and texture offered from the creamy avocado, crunchy seeds, sweet and tart berries, and citrus dressing makes each bite completely delectable.
And, if you don't have all the ingredients on hand it's not to worry! You can still make a delicious buddha bowl that reaps all the same benefits and flavour! The best part about Buddha Bowls is that there is no real recipe; they are always changing. Feel free to switch up the veg, or try quinoa instead of red rice. Not a fan of chickpeas? Try black beans or lentils instead! Swap the cilantro for parsley if you must! The options are endless, but the outcome always the same - you feel satisfied, satiated and best of all; healthy.

Red, Green and Clean Buddha Bowl
Serves: 2 | Prep Time: 15 mins| Cook Time: 15 minutes
Ingredients:
1/2 cup red rice
1 cup water
1 handful mâche leaves, spinach, or other leafy greens
1/2 cucumber, chopped
1/2 avocado
1/2 cup cooked chickpeas
1/4 cup fresh peas
1/4 cup red currants
1/4 cup cilantro
1/4 cup chives, chopped
sesame to sprinkle
chia to sprinkle
salt and pepper, to taste
the juice of 1/2 lemon (optional)
For the Dijon Vinaigrette:
1/4 cup aged balsamic vinegar
2 tbsp olive oil
1 garlic clove
1 tbsp dijon mustard (optional)
1 garlic clove, finely chopped
pinch sea salt
Directions:
In a saucepan add your rice and water. Bring to a boil, then reduce to simmer and cook for 12-15 minutes, or as instructed on package.
In a bowl add cooked rice and mâche leaves. Decorate bowl with chopped cucumber, avocado, chickpeas, fresh peas and red currants. Top with cilantro and sprinkle with chopped chives, sesame and chia. Crack with salt and pepper.
Next, make your dressing by adding balsamic vinegar, olive oil, chopped garlic, dijon mustard and sea salt to a jar. Secure with lid and shake until combined.
Drizzle buddha bowl with Dijon Vinaigrette, and serve with 1/2 lemon for an extra citrus boost if desired.
