Pink Maca Smoothie Bowl

Hi guys! It's a quick smoothie bowl post today for this Pink Maca Smoothie Bowl!

This Pink Maca Smoothie Bowl is made with frozen raspberries, red currants, banana, plant-protein powder, maca powder and coconut milk.

Can you tell that I'm on a maca powder craze at the moment? If my Pink Maca Nice Cream Parfaits weren't enough, I've started adding maca to all my breakfasts. I'm completely obsessed with the taste and health benefits of this powder! It's got a naturally sweet flavour that pairs so nicely with red fruits like raspberry and red currants, and it's SO good for us women. Apparently, one of the many benefits of maca is that it stimulates hair growth, which I'm all for at the moment as it's recently thinned from going off birth control. Just like in my last post about this, let me preface by saying that I'm no expert in the matter. Just your typical self-diagnosing-online-researching-hypocondriac who is convinced this superfood is the answers to thicken my hair back to normal! So it's no surprise that I've been taking every opportunity to add it to my recipes. The bright side is that it's so tasty; adding a beautiful sweetness and mildly nutty flavour to my breakfast bowls. I love it! The downside is that I can't seem to stock enough maca in my pantry to fulfill this new habit.

On the other hand I've also added another new ingredient to this smoothie bowl - and that is a handful of cauliflower. Yep, you heard that right! Actually this was yet another recommendation by the Tone it Up girls, Karena Dawn and Katrina Scott, who recommend adding it as a healthy way to add thickness and creaminess to our smoothies, and to easily get in an extra serving of veg. You should have SEEN my hubby's face when I threw the cauliflower florets into the blender. As if my maca powder obsession wasn't enough to deal with, now I was blending up cauliflower and drinking it!? He totally thought I'd gone bananas! Or, should I say, gone cauliflower crazy!? But it turns out, the TIU girls are right. It DOES makes your smoothies thick and creamy. And, you can't taste the cauliflower at all, so why not reap the benefits of the extra veg? Of course, if this step freaks you out then feel free to forgo. It still delicious without. I've then topped the bowl with fresh melon, watermelon stars, more red currants, coconut flakes and granola. Of course, how you choose to decorate is entirely up to you!

All in all, I hope you you enjoy this delightful Pink Maca Smoothie Bowl! It's a perfect superfood summer breakfast or snack that's so healthy and delish!

Pink Maca Smoothie Bowl

 

Serves: 1 | Prep Time: 5 mins| Cook Time: 0 mins

 

Ingredients:

  • 1/2 cup frozen raspberries

  • 1/4 cup red currants, fresh or frozen

  • 1/4 cup (1 handful) frozen cauliflower florets (optional)

  • 1/2 frozen banana

  • 1 scoop protein powder

  • 3 tbsp maca powder

  • 1/3 cup coconut milk, plus more as needed for blending (or other dairy-free milk)

  • For topping: cantaloupe, watermelon, more red currants, granola, coconut flakes and hemp hearts

Directions:

  1. In a blender add frozen raspberries, red currants, cauliflower, banana, protein powder and maca powder. Pour in coconut milk and blend, adding more milk as needed for desired consistency.

  2. Pour smoothie into a bowl and top with cantaloup balls, watermelon stars, and more red currants. Sprinkle with granola, coconut flakes and hemp hearts.
