Summer Salsa Verde

This Summer Salsa Verde OMG! I can't think of a recipe that screams summer long weekends more than this refreshing salsa dip. Made with green tomatoes, green onion, garlic, chili, lime, cilantro and cumin. I’m in LOVE with this deliciously refreshing summer salsa. And with the Canada Day long weekend around the corner it's the perfect recipe to munch on while on the dock, among good company, and a beer in hand of course. Best news of all is that I’ll actually BE in Canada among good friends to mark the occasion. Wahoo! We've been planning this trip home for a year and I can't believe how fast it's come!

We land in Toronto Saturday afternoon and from there are going straight to the cottage to chill out with friends. I kid you not and I am literally picturing this salsa verde in my daydreams of it. Good news is I can easily make this wish come true in minutes. It's a one-bowl recipe with only 7 ingredients, and takes only 10 minutes to make. Honestly, if you're looking for a hassle-free summer dip that allows you to head down to the dock looking like a hero look no further. This salsa verde is exactly that:

refreshing

citrusy

light

spicy

easy and,

flavourful!

I mean, what more could you ask for in a dip? I actually made this salsa verde last week during the heat wave and had it waiting in the fridge to serve as an appetizer before dinner. Honestly it's a miracle it made it to the evening - because every time I opened the fridge it was heaven. I'd get a delicious citrus lime smell that would have me drooling like a baby. Not to mention the air conditioned fridge was totally taunting me with its cold breeze in my plus 30 degree apartment. So much so that I literally wanted to shrink to miniature size and bathe in my salsa verde!

It's no surprise it was gone within minutes of serving. With that refreshing smell it was just too irresistible to resist! So why not serve a refreshing citrus bowl of Salsa Verde this Canada Day long weekend? Can't think of anything more perfect that catching up with old friends, under the scorching sun with this summer salsa verde. Sounds like the perfect vacation to me.

Summer Salsa Verde

 

Serves: 4 | Prep Time: 10-15 mins| Cook Time: 0 mins

 

Ingredients:

  • 5 green tomatoes (~485g)

  • 3 green onion (40g)

  • 3 garlic cloves

  • 1 green chile

  • pinch cumin

  • salt and pepper, to taste

  • cilantro, chopped, to taste

Directions:

  1. Finely chop green tomatoes, green onion and garlic cloves and add to a mixing bowl. Stir to combine.

  2. Finely chop green chile and add to the mixing bowl (both the skin and seeds). Mix to combine.

  3. Add a pinch of cumin, and some salt and pepper to taste. Top with cilantro to taste and stir to combine. Place salsa verde in the fridge to chill for at least 30 minutes. Serve chilled with tortilla chips.
