Decadent Peach Parfaits

There is something about summer that makes me a sucker for parfaits! Whether it's for breakfast, snack, or dessert it's parfaits all day. And why not? They're light, cold, and deliciously fresh. And the magnificent ease of simply adding fresh fruit to yogurt and a little granola is a gift when temperatures are soaring and you want something quick and easy. Summer treats must take less than 5 minutes and a steady heart rate to create! And there's no argument that the ratio of deliciousness to the level of difficulty is totally twisted when it comes to parfaits. How can something so easy be so delicious!? It's far from the steady incline on the graphs we so often saw in math class.

And every fruit works for a parfait perfect treat. Would you like strawberry, rhubarb, pineapple or peach?! It's a parfait party! But I must say that I'm peachy keen on these decadent peach parfaits! Peaches are wonder good right now, with each week offering more delicious and juicier peaches than the last. And whether you like white flesh peaches, classic yellow, or the donut peach make no mistake that each is peach is perfect for this decadent treat.

In this recipe I've used free stone white-flesh peaches (my favourite). Then I've added a scoop of soy yogurt to the middle (in replace of the pit), and sprinkled with crunchy granola, chia, and fresh mint. Then I've drizzled it with a little chocolate sauce (because you only live once). It's decadent and delicious! And, would you believe me if I said it took under 10 minutes to create these beauts? Totally speachless.

I hope you enjoy these peach perfect parfait as much as I do. They've no doubt stolen a peach of my heart this summer.

 

Decadent Peach Parfaits

 

Serves: 4-6 | Prep Time: 10 mins| Cook Time: 0 mins

 

Ingredients:

  • 6 free-stone peaches

  • 1 cup soy yogurt, or plant-based yogurt of choice

  • gluten-free granola, to sprinkle

  • fresh mint, to sprinkle

  • chia seeds, to sprinkle

  • chocolate syrup, to drizzle

Directions:

  1. Cut your peaches in half all the way around. Hold each half of the cut peach and twist the halves in opposite directions to loosen the pit. Pull the peach halves apart and remove the pit.

  2. Fill the middle of the peach (i.e. were the pit used to be) with yogurt. Then sprinkle with granola, fresh mint and chia seeds. Drizzle with chocolate syrup.
