Pink Raspberry Champagne Popsicles

Say hello to these Pink Raspberry Champagne Popsicles. Because it's sweltering heat outside, and because I need a drink to take my mind off it!
It's another whopping 35 degrees outside today, and it feels like this heat wave is never going to break. Hump day Wednesday is surely feeling like Mount Everest at this point as I sit here with the fan on full blast and an ice pack on my back. Cue these Raspberry Champagne Popsicles, a cool adult treat that's the only thing getting me through these rising temperatures. When it's hot out, we drink! It's one of the beauties of summer, you can get away with pouring a drink mid-day with no judgement. A Saturday afternoon at the beach calls for a pitcher of sangria. A boat ride on the lake needs a beer in hand. And I reckon bringing these champagne poppies to the picnic is sure to make you a hero for the day.
These Champagne Popsicles are a simple mix of raspberries, champagne and sparkling water. Since moving to France I have fallen even more in love with this bubbly drink. I don't know if it makes me more French for using Champagne in this recipe, or less French because I froze it! (I might be on the verge of getting deported). But this adult iced treat is every bit worth the risk. Of course, you could always substitute the champagne for sparkling white wine to avoid any uproar. All-in-all nothing beats the heat better than an iced cold popsicle, and nothing makes hits the spot more than an alcoholic one!
Now excuse me while I crawl to my freezer for one of these tantalizing treats. Who said you can't enjoy the wonders of champagne in jean shorts and a white tee?



Pink Raspberry Champagne Popsicles
Makes: 12 popsicles | Prep Time: 5 mins| Freeze Time: 1-2 hrs
Ingredients:
1/4 cup raspberries
1 bottle champagne, or sparkling wine
1 bottle sparkling water
Wooden 12 popsicle sticks
Directions:
Add 3-4 raspberries to silicon popsicle moulds. Then, fill each popsicle mould with half champagne and half sparkling water to be 3/4's full. (You want to leave a little space at the top as it will rise when freezing).
Place popsicle sticks into the centre of popsicle mould and place in the freezer. Check after 1 hour, and re-centre the popsicle sticks if they have fallen. Chill for another 1-2 hours, or until popsicles are frozen solid.
