Fluffy Rice Clouds

I'm on Cloud 9 with these Fluffy Rice Clouds! Made with sticky sushi rice and nori for the eyes. When it comes to sticky rice I have no self control. Put a bowl in front of me and I'll devour it in seconds! Make it into a plate of these Fluffy Rice Clouds? I would say it's the closest thing to walking on clouds. ;)

And why not get a little creative with some sticky rice? It's a cute way to spruce up the typical bowl. A few fluffy rice clouds are sure to make you smile. And as it's only Monday, we need an excuse to have our heads in the clouds. What would you be doing on a far away beach resort in Bali? Or, if you found a $1000 bill on your walk home? Dreaming is too easy with these Fluffly Rice Clouds.

And it couldn't be easier to make as well! Here's how you do it: Cook your sushi rice as per usual (recipe also provided below). Then, spread rice on a plate to cool slightly. Lather hands with a bit of coconut oil and roll the rice into little golf balls. Bunch a few of the rice balls together to look like clouds, then cut some nori paper into little C's and I's for the eyes and lashes. Decorate each cloud with nori eyes and you've got the fluffiest rice clouds to day dream away. Whoever said you shouldn't play with your food clearly never made these!

That's all there is to say! Keeping this post short and sweet, as I've got lots of dreaming to catch up on. I hope these Fluffy Rice Clouds have you floating too. :)

 

Fluffy Rice Clouds

 

Makes: 8-10 | Prep Time: 30 mins| Cook Time: 20 mins

 

Ingredients:

  • 3 cups (750ml) water

  • 2 cups (450g) uncooked sushi rice

  • 1/2 cup (120ml) rice vinegar

  • 1/4 cup (50g) white sugar

  • 1 tsp salt

  • 1 tbsp sesame oil

  • 1 sheet nori paper

  • coconut oil, for rolling

Directions:

  1. Bring water to boil. Pour in sushi rice, then reduce heat to simmer, cover with a lid and cook rice for 20 minutes, or until cooked through.

  2. In a saucepan, combine rice vinegar, sugar, salt and sesame oil. Bring to low heat and stir to combine.

  3. When rice is cooked remove from heat and pour in liquid mixture in batches, stirring rice to combine.

  4. Cover pot of rice with clean dish towel and let sit for 10-15 minutes. Then scoop rice onto a clean surface and spread it out to cool before handling.

  5. When rice is cool enough to handle, lather hands with a bit of coconut oil. Scoop approx. 2-3 tbsp of rice into hands and roll to form balls about the size of a golfball. Place on a clean plate. Continue process until you've formed all the rice into balls. Lathering hands with coconut oil as needed to stop from sticking.

  6. Next, clump rice balls together into the shape of clouds (I used 6 balls per cloud: one for the top, two in the middle, and three on the bottom). Using the back of a spoon slightly flatten the rice balls into each other, to clump them together into a cloud shape. Continue process for each rice cloud.

  7. With scissors cut nori into strips. Then cut out small C's and I's for the eyes and lashes. Decorate each cloud with two C's for the eyes, and 6 I's for the lashes (three I's per each eye).
