Red Berry and Creamy Chia Pudding

I've been eating this Red Berry and Creamy Chia Pudding for weeks because its so simple to make and SO scrumptious! This has got to be one of the EASIEST recipes to toss together for breakfast. It takes just 3 easy steps! Or you can eat it for snack time, or dessert, or dinner for that matter. I could seriously eat this drool-worthy pudding any time of day. Whose with me?!
What makes this recipe SO GOURMET is the creamy homemade almond mylk. I've used my 10-Minute Classic Almond Milk for this recipe, and it gives it an amazing creaminess that you just can't replicate with the store bought. Yes, it takes an extra 10-minutes to make the homemade almond milk, but I promise - the juice is worth the squeeze! And I kid you not - the quality of chia pudding homemade almond mylk makes is so chef-worthy it will change your breakfast game. Plus, it only takes 10-minutes, which all-in-all isn't very long. I spend more time scrolling through my Instagram account than that! I've had to add extra sweetener to my puddings when I use the store bought almond mylk; adding maple syrup, chopped dates, and mashed bananas. But, when it's homemade almond mylk I only add the chia and mylk. It's so rich and creamy you don't want anything to takeover the taste. Apart from those ooey-gooey red berries of course!
You may have noticed that I'm a big fan of using thawed frozen fruits in my breakfast. I just love the sweet taste and jammy texture it gives. I guess you could say that frozen berries are my jam! Plus, berries aren't even in season yet so why not save on the astronomical prices for white capped and tasteless strawbs and choose frozen instead? Using them in this recipe is a cinch. Just open the frozen berries and pour into a big bowl. Cover them with surran wrap and leave them in the fridge overnight to thaw. Come morning you've got the jammiest red berries to use in your breakfast bowls that will last you the week. Easy peasy frozen fruit squeezy. And for the chia pudding; it's pretty much the same level of simple. Mix chia with homemade almond milk, leave in the fridge overnight and come morning you've for the creamiest and dreamiest chia pudding to start your day. Top with thawed red berries and you'll be starting the week in the best possible way.

Red Berry and Creamy Chia Pudding
Serves: 2| Prep Time: Overnight + 10 minutes (10 minutes active prep)| Cook Time: 0 mins
Ingredients:
1/4 chia seeds
3/4 cups homemade almond milk, plus more if desired
1 1/4 cup frozen red berries (raspberries, blueberries, blackberries etc), plus more if desired
1 banana, chopped
coconut flakes, to taste
buckwheat, to taste
walnuts, to taste
Directions:
Prepare your pudding the night before, or at least 10 minutes before eating: add chia seeds to homemade almond milk. Stir well to combine. Wait 5 minutes, then stir again to stop the chia from clumping. Place pudding in the fridge overnight to absorb.
Pour frozen red berries into a big bowl. Cover with surran wrap and place in the fridge to thaw overnight.
In the morning remove pudding and red fruit from the fridge. Add more almond milk to pudding if desired for preferred consistency. Add chopped banana to each jar (or bowls). Split pudding between the two jars and top each with thawed red berries. Sprinkle with coconut flakes, buckwheat and chopped walnuts.
