Broiled Blood Oranges with Sweet Coconut Sugar

EASY RECIPE ALERT! That's right, these Roasted Blood Oranges with Coconut Sugar requires only 3 ingredients and takes 5 minutes to make! And they are DELISH! I can't seem to get enough of citrus fruits this year. Trips to the market ends in bags of citrus from grapefruit, to clementines and navels. But my favourite are the blood ones! And maybe it's my obsession for Twilight teen fiction, but I'm okay with it! Blood oranges are sooo incredibly sweet and juicy compared to the rest. And I'd argue the most beautiful - opening one is like a piece of edible art! I swear I'd get them confused as an art instillation if they appeared in museum restaurants and cafes. Probably why they stick to selling green apples and bananas. Each orange is a little mystery too - you never know what it's going to look like when you open it, whether it will be orange, red or a perfect blend of both. It's like a healthy plant-based Kinder Surprise! So needless to say this collection of pro's has me bee-lining towards them every time I see them.

This week I was reading in bed when I came across a recipe for broiling grapefruit. Inspiration was ignited. How pretty would it be to broil blood oranges? I loved how simple and quick the recipe promised to be - and a perfect addition to a variety of recipes. These sweet and roasted blood oranges can be enjoyed in so many ways - in breakfast bowls like overnight oats, topped with coconut or soy yogurt, dressed in salads, and as dessert with some nice cream. Or, if you're like me you can just slurp them standing for no reason other than they're so damn pretty you just couldn't help it! It's such a clean and healthy recipe too, which resonates well with my mentality as I continue to see signs of Spring just around the corner. It's a spring cleaning recipe for our bellies, that we can feel healthy, clean and guilt-free about.

But best of all is that it's truly a hassle free recipe with delicious benefits. Simply slice the blood oranges in half, paint with a little oil, sprinkle with some coconut sugar and broil! The outcome is a beautifully baked sweet treat that makes it easy to get your daily vit C.

That's really all I have to say about these pretties. Keeping it simple and sweet - just as the recipe calls for. Hope you enjoy these pretty sweet gems. ;)

Broiled Blood Oranges with Sweet Coconut Sugar

Makes: 6 | Prep Time: 5 mins| Cook Time: 5-10 minutes

Ingredients:

  • 3 blood oranges

  • 1 tbsp grape seed oil, plus more if needed

  • 3 tsp coconut sugar, plus more if desired

Directions:

  1. Turn oven to broil. Slice blood oranges in half and lay on a baking tray flesh side up

  2. Paint the flesh with oil and sprinkle each orange with 1/2 tsp coconut sugar. Place in oven to broil for 5-10 minutes, or until golden and bubbling.
