Passionfruit Porridge with Coconut and Orange

This Passionfruit Porridge is making me feel all warm and fuzzy inside for Valentines' Day! I find it amusing really, because each year I tell myself that I won't get swept away in the cliché romantics of V-day, and each year I find myself falling into the trap of seeing pinks and hearts in everything! Getting all giddy about candlelight dinners and cutesy movies. I blame it on my twelve year old self, who once longed for the day that Nick Carter would show up at her door with a bouquet of red roses. My brain is wired for superfluous romantics whether I like it or not. Like Harry Potter succumbing to talking Parseltongue with Lord Voldemort, despite his resistance. Oh goodness, did I just compare Valentines Day to Lord Voldemort? Can you see my efforts to defy?!
But, I must confess that I am who I am - a hopeless romantic that's a sucker for love, and my favourite way to express it is by cooking! This Passionfruit Porridge with Coconut and Orange is a couples breakfast retreat. Made by combining oats, chia and coconut milk, and topping with sliced blood orange, passionfruit, buckwheat, hemp hearts and coconut flakes. This pink and yellowy bowl is a delightful valentines breakfast to show just how much you care.
I love the flavour mixtures in this bowl - the combination of exotic and tart with its passionfruit and coconut flavours, paired with sweet citrus and creamy oats. Waking up to this breakfast feels like a tropical getaway for two. A dreamy breakfast in bed that will have you remembering just how much you love to give and get a kind romantic gesture. I also love how easy this recipe is to prepare. Simply soak the overnight oats and chia the night before, and in the morning top with passionfruit, orange, coconut flakes and the like. It's quick and easy, but sweet nonetheless. The last thing I love about this passionfruit bowl is it doesn't break the bank! Mitch and I decided to take a minimalist approach to V-Day this year - forgoing gifts and expensive gestures. This bowl is an experiential way to show your love and appreciation; and hey, everybody's got to eat...so why not put the extra effort where it counts!

Passionfruit Porridge with Orange and Coconut
Serves: 2| Prep Time: Overnight + 10 minutes (10 minutes active prep)| Cook Time: 0 mins
Ingredients:
1 cup oats
1 tbsp chia seeds
2 cups almond milk (or milk of choice), plus more if desired
2 tsp maple syrp, plus more if desired
pinch salt
2 passionfruit, plus more if desired
2 blood oranges, peel removed
4 tsp coconut flakes
2 tsp buckwheat
2 tsp hemp hearts
Directions:
Prepare your pudding the night before, or at least 10 minutes before eating: add chia seeds, coconut milk, maple syrup and a pinch of salt. Stir well to combine. Wait 5 minutes, then stir again to stop the chia from clumping. Slice passionfruit in two and add the inner flesh to the porridge. Mix to combine and place porridge in the fridge overnight to absorb.
In the morning remove porridge from the fridge. Split porridge into two bowls and top each with one sliced blood orange, coconut flakes, buckwheat, and hemp hearts. Add more passionfruit, maple syrup and coconut milk if desired.
