Berry Loaded Chia Pudding

This Berry Loaded Chia Pudding is the epitome of a decadent pudding! It's a sweet, wholesome, and healthy breakfast or snack to pamper yourself! And it's easy to make, so you are steps away from tranquility. This chia pudding is made with a traditional base of chia and nut milk, and similar to my Chocolate Chia Overnight Oats this one takes advantage of winter fruits using thawed raspberries and fresh pomegranate. We've then topped it with chopped dates, sunflower seeds and coconut flakes.
I cannot believe how well the thawed raspberries work in this pudding. It's ludicrous! When the berries are thawed they give an ooey-gooey jammy texture that's so sweet and decadent. Like a berry sauce worthy of a sundae topping; but healthy! Honestly, I could drink the juice leftover in the bowl after thawing these berries overnight - er, "could drink?" What am I saying, I absolutely DO drink it! There's no way I'm pouring that delicacy down the drain! Then we've added beautifully caramelly and naturally sweet dates, and a coconut crunch. The sunflower seeds offers a little nutiness, and of course we can't forget the pomegranate - because I've become accustomed to a certain standard of eating this winter, which involves serving every dish with pomegranate!
To be honest I haven't been a big fan of chia puddings in the past (hold on to those rotten tomatoes!). It's just that I find chia puddings a little bland, and too jello-y for my liking. I typically add oats and mashed banana to the mix to make more of an oaty base than a pudding base. But, with this recipe I regret my previous statement. There's no denying this jazzed up chia pudding is far from boring, and will put anyone in a state of glee for the hours that follow. And those colours! That jammy red and flaky coconut has heads turning - it's so pretty! And what's more enjoyable than eating something that's tasty AND beautiful? I can't help but stare at this bowl when indulging. Set it down in front of me and I'll stare at the red berry swirls so intently one would think I was trying to read my future. Feel free to cancel that meeting with my physic, cuz today's forecasting sweet and rosey.

Berry Loaded Chia Pudding
Serves: 1| Prep Time: Overnight + 10 minutes (10 minutes active prep)| Cook Time: 0 mins
Ingredients:
1/4 cup chia seeds
1/2 cup coconut milk
1 tsp maple syrup, plus more if desired
pinch salt
1/2 cup frozen raspberries, thawed overnight
1/4 cup pomegranate seeds
1 medjool date, chopped
1 tbsp coconut shavings
1 tsp sunflower seeds
more coconut milk if desired
Directions:
Prepare your pudding the night before, or at least 10 minutes before eating: add chia seeds, coconut milk, maple syrup and a pinch of salt. Stir well to combine. Wait 5 minutes, then stir again to stop the chia from clumping. Place pudding in the fridge overnight to absorb. In addition, toss frozen raspberries into a bowl and let thaw in fridge overnight.
In the morning remove chia pudding from the fridge. Top with thawed raspberries, pomegranate seeds, chopped date, coconut shavings, sunflower seeds, and more maple syrup to taste. Pour in more coconut milk if desired for preferred consistency.
