Citrus Salad with Sweet Greens, Dill and Balsamic Glaze

Every year around this time I forget just how delicious citrus fruits become! From navel to clementines, to blood orange and grapefruits, they are exploding with juicy sweetness that has me smacking and slurping with every delicious wedge. I swear, the amount of enthusiasm over the juicy fruits is something out of a Welch's commercial. Do you think they audition adults for the role? Or is it just kids?
But honestly, I've been eating these citrus fruits so enthusiastically for the past few weeks that there are days when I've only eaten oranges come 3 p.m.! You'd think this realization would stop the obsession - but sadly no. Instead, I've found creative ways to include them within my meals, so that I can get away with consuming oranges for breakfast, lunch, and dinner without judgement. Take my Chocolate Orange Truffle Wedges for example. And now, this Citrus Salad with Sweet Greens, Dill and Balsamic Glaze. (Quick disclosure here; I'm not promoting a diet of solely citrus fruits...well maybe I am, but only because they're so yum right now!)
And this Citrus Salad w/ Sweet Greens and Balsamic Glaze is essential! It's a clean, green, and orange machine that uses the juicy fruits in all their glory! The recipes combines navel oranges, grapefruit, and blood orange for a citrus dream. For the greens I've used mâche salad greens. I love this delicate leaf because it has a subtle sweet flavour, and is so light and airy. It's really popular here in France - no surprise based on its characteristics. But, if you have trouble finding these leafy greens you can substitute it with baby spinach. They are quite similar. Then I've added some dill to compliment the already bright and clean flavours, chopped hazelnut for crunch, hemp hearts for a little more nuttiness, and a quality balsamic glaze. The combination is cosmic. Try it and see. And not only does this recipe give you another excuse for eating citrus fruits, it's an incredibly healthy salad that you can feel good about eating - especially as we're all trying to remember that New Year's resolution for a healthier intentions. Pair it with chickpeas, lentils or tofu and you'll have a clean and filling plate that will make your co-workers jealous of just how well you're doing. And, they'll be thankful too; for leaving that delicious citrus smell in the canteen. Susie's egg-salad doesn't stand a chance!



Citrus Salad with Sweet Greens, Dill, and Balsamic Glaze
Serves: 2-3| Prep Time: 15 mins| Cook Time: 0 mins
Ingredients:
1 handful mâche salad greens
1 grapefruit
1 navel orange
2 blood oranges
1/4 cup hazelnuts, chopped
2-3 sprigs fresh dill
1 tbsp hemp hearts
balsamic glaze to taste
sea salt and pepper
Directions:
On a large plate add your mâche salad greens. Cut the peel from your grapefruit and oranges. Turn grapefruit and oranges onto their side and slice into thin rounds, ("O" shaped).
Layer grapefruit and orange rounds overtop mâche salad greens. Sprinkle with chopped hazelnuts, dill, and hemp hearts. Drizzle with balsamic glaze to taste. Crack with sea salt and pepper.
