Vegan Parfait with Apple Compote

This Vegan Parfait with Apple Compote MY GOD! It's one of the most scrumptiously divine treats I have ever had the pleasure of eating! By the end I felt much like how this delicious parfait looks - a sweet melty bliss of euphoria. You won't believe how delicious is it, especially given such little effort it takes to throw together!

And I have to credit much of this parfaits wonderful taste to the fact that it's apple season and the crunchy fruits are too delicious to pass. For the past couple weeks Mitch and I have been going to the markets to find buckets upon buckets of freshly picked apples. And they're SO cheap! Plentiful varieties for sale at 3 lbs. for 5 euros. Whether you prefer sweet, acidic, soft or crunchy they've got them all just waiting to be titled the apple of your eye!

And although I LOVE nothing more than biting into a cold and freshly picked apple; 3 lbs. weekly is even too much for me! So what do you do with all these apples!? Make apple parfaits of course! I quickly got to making the apple compote - by peeling, chopping and warming the apples in a large saucepan with some coconut sugar and water. MY what an outcome! In the end I was left with a beautiful thick blend of sweet stewed apples to pair with nuts, granola, pie crust, and the like. But my favourite way? In a yogurt parfait! The pairing of sweet cooked apples with tart coconut yogurt is a beautiful combination and by far one of the best desserts I've tasted. Mitch and I were both in awe, sitting on either side of the mountainous apple parfait I'd thrown together, pushing each others spoons out the way for the best dig. (Remind me next time to separate the parfait evenly into two bowls).

And when I say "thrown together" I mean it! This yogurt parfait requires few instructions and little attention. Honestly, making this apple compote is like making soup - you simply toss the ingredients in a pan, let them simmer, and basically ignore them except for the occasional stir; here you have it. Then, scoop the apple compote into bowls (or a glass jar for a tower affect) add some coconut yogurt, and sprinkle with pecans. It doesn't get much easier!

And if you're planning to share this pretty jar of goodness perhaps prepare it in individual servings...ya know, to avoid unnecessary arguments with your loved ones. This might be the one and only time where TWO SPOONS isn't gonna work! ;)

 

Vegan Parfait with Apple Compote

 

Serves: 4| Prep Time: 15 mins| Cook Time: 20-30 mins

 

Ingredients:

  • 500g (approx. 4 apples)

  • 1/4 cup coconut sugar

  • 1 cup water

  • the juice of 1/2 lemon

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • pinch salt

  • 2 tbsp buckwheat flour (or all-purpose flour)

  • 2 cups coconut yogurt, or other dairy-free yogurt of choice

  • pecans for topping

*Note: This apple compote can made ahead, and will keep in the fridge for up to one week. Also try serving with granola, chopped nuts, or use as a pie filling!

Directions:

  1. Begin by peeling the skin off your apples. Then cut into thin slices.

  2. Toss your apples into a saucepan with coconut sugar, water, lemon juice, vanilla extract, cinnamon, nutmeg and salt.

  3. Bring apples to a boil, then reduce heat to a simmer to cook.

  4. When apples begin to soften (after approx. 15 minutes of simmering) add your buckwheat flour. Stir apples until all the flour is absorbed. The flour will allow the compote to thicken. Continue to boil until apples are desired consistency (approx. 30 minutes in total), add more water to thin the compote if desired.

  5. Divide apple compote into bowls, or glass jars. Top with coconut yogurt and sprinkle with pecans.
