Chocolate Peanut Protein Truffles
Makes: 12-14| Prep Time: Approx. 2.5 hrs| Cook Time: 15 mins
Ingredients:
1/2 cup oat flour (ground oats)
1/4 cup large flake oats
2 scoops vanilla protein powder
1 tbsp chia seeds
1 tbsp cocoa powder
2 tbsp all natural peanut butter
1/4 cup almond milk, plus more if necessary
100g vegan dark chocolate (1 chocolate bar)
1 tsp coconut oil
salt flakes (optional)
Directions:
In a large mixing bowl add your oat flour, large flakes oats, protein powder, chia seeds, cocoa powder, peanut butter and almond milk. Mix well to make a cookie dough texture. (Add more almond milk by the teaspoon if needed to smoothen the texture).
Line a plate with parchment paper. Then, roll the dough into small balls about the size of a ping-pong ball using your hands. (Add coconut oil to your palms as needed to stop the dough from sticking while rolling.) Place balls onto the parchment lined plate. Continue process until you've used all the dough. Then place the dough balls in the freezer for 1-2 hours, or until hard.
Place water in the bottom of the double boiler. Then place the double boiler over low heat. Stir the chocolate constantly until it is melted. Add 1 tsp coconut oil and stir to combine.
Remove dough balls from freezer and insert them into the melted chocolate with a spoon. Roll the balls in the chocolate to coat entirely, then place back on the plate. Sprinkle with salt flakes if desired. Continue process until all dough balls are covered in chocolate.
Place truffles in the fridge or freezer to harden for 30 minutes. Then serve.
