Golden & Nutty Breakfast Cookies

These wonderful little breakfast cookies have been in my back pocket for some time now as the perfect protein-packed, energy-boosting treat. I created this recipe a few years ago while blogging as a student on my Happy Tummy Healthy Body blog. I was looking for a quick and delicious on-the-go breakfast cookie, and this Golden & Nutty Breakfast Cookie proved perfect for just that. These mighty cookies are packed with oats, nuts, seeds and nut butter, and sweetened with honey and dried fruit, making them undoubtedly wholesome and delicious! They're a perfect way to start your day.

To my detriment I had forgotten about this wonderful cookie until a few weeks ago, when my husband and I were visiting family friends in the English countryside. Our friends had mentioned before visiting that they had our wedding gift, and that we could take it home when we visited. Touched by the generous gesture, I replied with a warm thanks.

Little did I know just how incredible this wedding gift was...

Upon arriving, Jim and Lucy, the parents of our family friends took Mitch and I aside to show us our gift. They lead us to a room in their home, and over to the corner where there were 5 to 6 brown boxes stacked high. Jim asked me to open one to see inside. Inside the box was hard copies of a cook book. But this wasn't just any cookbook, to my shock and amazement it was MY cookbook! There on the glossy front cover was a picture of me in the kitchen with the title,

I was in complete shock and awe....This incredible family had put together favourite recipes from my Happy Tummy Healthy Body blog, and made it into a book. They had it publish, printed, and bound just for me. What a generous act of love and support. It was the most thoughtful gift I have ever recieved, and one that touched my soul. I was beyond grateful and completely lost for words.

Taking the book in my hands I flipped through the pages gazing at the recipes and pictures. Instantly, I was taken back to when I started Happy Tummy Healthy Body; a time in my life where my personal journey with cooking began. During this time I learned so much about the world of cooking: How cooking can heal our bodies and souls, how you don't need to be an expert to cook, and how cooking is an education and a constant opportunity to learn. More than that, cooking is an art of expression and an act of love for all that you share with. Flipping through the book I was also reintroduced to so many recipes that were old favourites, and others that I still cook today. I even found recipes I have altered overtime as my tastes and preferences have changed.

When I first started cooking I felt a lot of anxiety towards it - I felt like an imposter, who didn't know what I was doing, how flavours mixed together, or what tools to use. It was a complete "learn-by-doing" experience. Reading the book showed me just how much I've learned over the years through this approach. In that moment the book gave me so much sense of purpose. It reinvigorated me and gave me a feeling of personal pride. This beautiful book represents resilience and possibility. That trying new things and taking risks can lead to miraculous outcomes. It reminded me that you can achieve almost anything with a little hard work, passion and support - even being the author of your very own cook book.

The Golden & Nutty Breakfast Cookies instantly caught my attention as one I wanted to share with you. It's an old favourite of mine that proves cooking is a learn-by-doing skill, and that everyone is capable. The recipe proves you don't need to be an expert chef to make something incredibly delicious and nutritious. All you need are some basic ingredients and a few simple steps. It's a tribute to the beginning, back when I was a newbie cook, and proves that a little passion, effort, and confidence in the kitchen goes a long way.

I hope you enjoy this wonderful cookie recipe just as much as I have. And that it can provide you with a similar sense of joy and accomplishment.

 

Golden & Nutty Breakfast Cookies

 

Makes: 12-15 cookies| Prep Time: 15 mins | Cook Time: 15 mins

 

Ingredients:

  • 1 1/2 cup large flake oats

  • 1/4 cup raisins and goji berries, mixed

  • 1/4 cup walnuts

  • 1/4 cup pumpkin seeds

  • 1/4 tsp ground ginger

  • 1/2 tsp cinnamon

  • 1/8 tsp fine ground sea salt

  • 1/2 cup almond butter

  • 1/2 cup honey

  • coconut oil (for rolling)

Preparation:

  1. Preheat oven to 325F. In a large mixing bowl add your dry ingredients: oats, raisins, goji berries, walnuts, pumpkin seeds, ground ginger, cinnamon and sea salt. Mix together.

  2. Add almond butter and honey to the dry mix and stir with a wooden spoon to combine.

  3. Line a baking tray with parchment paper. Rub hands with a drop of coconut oil to coat and roll cookie dough using your hand into balls approximately the size of a golf ball. Place dough balls on baking tray approx. 5 cm apart and continue to the process until you have used all the cookie dough. (Add coconut oil to your hands as needed to stop the dough from sticking while rolling.)

  4. Lightly apply pressure to the top of each dough ball on the baking tray to slightly flatten.

  5. Place cookies in the oven and bake for 10-15 minutes, or until golden brown.
