Chocolate Espresso Chia Pudding

This dessert...I have no words. I'm still floating in the heavenly medley of chocolate, coffee and nice cream that is this chia pudding. I'm sure you know the feeling - of a dreamy dessert that will have you blissfully unaware of anything but its sweet sweet medley. Which after every passing bite, the ability to form words becomes increasingly difficult. Your senses are heightened and all inhibition is lost as you delve in scoop-by-scoop, until you recognize the glassy sound of spoon against bowl. You mindfully take your last bite, lay back, and melt into a perfectly sweet food coma...
This is the what I call the Chocolate Espresso Chia Pudding. An indulging, heavenly dessert that will literally make you forget your name. It invites you into it's complete trance of desserty bliss, which with few ingredients and minimal prep work is all to easy. You're looking at some simple chia seeds, espresso, almond milk, cocoa powder and vanilla. Stirred together and then topped with frozen nana's and maple drizzle; it's a simple dessert at it's finest!
Don't you just love simple desserts that are easy to make? It's a true dream from beginning to end! For this dessert, all you need is a mixing bowl! Toss together your chia seeds, espresso, almond milk and cocoa powder and marvel at the magic these ingredients make! After a couple hours of gelling, you simply scoop the pudding into bowls and serve. Or, if you're feeling a little guilty from the minimal effort taken; top with blended frozen nanas (a.k.a. nice cream), some maple drizzle and chocolate flakes. Then, sit back and let the compliments reign in.
Really, I dont have much more to say than that - except give it a try! It's a deadly delicious dessert that is all to easy to create. Take a deep happy breath and enjoy the view from cloud nine as you indulge in this wonder good dessert. I'll see you up there.



Chocolate Espresso Chia Pudding
Serves: 2| Prep Time: 2h 15 mins (15 mins active prep time) | Cook Time: 0 mins
Ingredients:
1/4 cup chia seeds
1 espresso shot
1/2 cup almond milk (plus more if desired)
2 tbsp maple syrup
3/4 tsp cocoa powder
1/4 tsp vanilla
For the Nice Cream & Toppings:
1 cup frozen bananas (approx. 2 bananas)
maple syrup to drizzle
dark chocolate flakes
Directions:
In a mixing bowl add your chia seeds, espresso shot, almond milk, maple syrup, cocoa powder and vanilla. Mix together and let rest for 10 minutes. Then mix again and place in the fridge to set for two hours.*
When ready to serve remove chia pudding from fridge. Stir pudding and add small splashes of almond milk if desired to reach preferred consistency. Scoop into bowls.
Using your food processor add frozen bananas and blend until smooth. Generously scoop nice cream on top of your pudding. Drizzle with maple syrup and sprinkle with dark chocolate shavings.
*Note: Chia pudding can be made up to 2 days ahead. Keep cool in fridge until ready to serve.
