Made with oats, honey, tahini and walnuts it's a simple recipe with pure ingredients, and when combined it's heaven! Get ready to roll your head back and sigh "mmmmm!" after your first bite of these bad boys. (It's a gut reaction you just can't help but make!).
So why are these cookies so tasty? Because they are exactly what you'd hope for in a freshly baked biscuit. They tick all the judge's requirements. The colour of these cookies when freshly baked is beautifully golden. You've got a gorgeously crunchy exterior with an ultra soft interior. And the taste is divine! You'll be basking in the sweet taste of honey with a toasted walnut crunch. Not to mention the aroma that fills your home when baking is bliss. You might want to consider making two batches of these tasty treats, because these cookies are sure to score 10 points all around.
There are just a couple easy tips I want to give when baking these cookies, to ensure they come out perfect. The first is the dough; Don't worry if the dough doesn't create a gooey texture you're used to with typical cookie recipes. It might appear a little more crumbly, but rest assured the tahini, honey and oats are all you need for binding! And the natural oils keep them ultra moist. You will notice, once you start rolling the dough with your hands just how well the cookies bind together.
The second thing, don't forget to use a timer! Just like all cookies, these tasty treats bake quick! You'll only need 10-12 minutes before they're golden brown and ready to eat, so just be sure you don't start a new load of laundry while you're waiting!

Delicious & Healthy Honey Tahini Cookies
Makes 12
Ingredients:
1 1/2 cup of oats
1/2 cup tahini paste
1/2 cup of honey
1 1/2 tsp vanilla extract
1/2 tsp of cinnamon
1/4 tsp. salt
1 1/2 tbsp coconut oil (melted)
¼ cup of walnuts
¼ cup of raisins
Directions:
Pre-heat oven to 350F.
In a big bowl add your oats, tahini, honey, vanilla extract, cinnamon and salt. Melt your coconut oil and add.
Mix all ingredients together until it forms a dough
Next, add the raisins and walnuts. Mix well.
Line a baking tray with parchment paper. Then, use your hands to roll the cookie dough into balls (about 2 inches in diameter). Place the cookie balls onto your baking tray.
Lightly apply pressure to the top of each cookie ball to flatten them slightly.
Place cookies in the oven to bake for 10 minutes, or until golden brown.
Remove from oven and transfer cookies to a cooling rack.
