Ridiculously Delicious Thin-Crust Pizza

"Pizza," it's like music to my ears. Is there anyone in the world who DOESN'T like this wonderful dish? If so, I need to ask this person when they plan returning to Mars, because pizza is seriously the definition of popular dish. And this thin crust pizza is proof!

This recipe is fast, easy, and deadly delicious! It will shock you how good given such little effort. I like to make this on a Friday night when I want something easy but celebratory to kick-off the weekend. Or, if I'm entertaining and need a quick and impressive looking dish. All you need to do is prepare the dough (very simple I promise!), and top it with some veg. Fifteen minutes later you have a sizzling golden pizza and a thousand compliments! Get ready to bask in the glory - because by end of night you will be considering a head chef position at La Pizzeria.

This recipe makes one pizza the perfect size for me and Mitch, so feel free to double/triple/or quadruple the recipe if you're planning a party. You can see that I've made this with my pizza stone, which I'm obsessed with! It cooks the dough so evenly. But, if you don't have a pizza stone it's no problem. Just use a regular baking pan - I promise it works. In fact, I just recently got my pizza stone, so have hosted more parties with a baking pan than pizza stone. It just takes a bit longer, and you might also want to make your pizza rectangular to better fit the pan. An easy-peasy change to say the least!

If you're planning to make more than one pizza you can also try switching up the ingredients. I LOVE kale, but I also really like switching it for arugula. You can also try using some different veg - mushrooms, red pepper, even avocado is delish!

Ridiculously Delicious Thin-Crust Pizza

 

Serves 2

 

Ingredients:

For the dough:

  • 200 g (7 3/4 ounces) flour

  • 1 tsp salt

  • 2 tbsp dried bakers yeast

  • 2 tbsp olive oil

  • 3 1/2 fl oz. warm water

  • more flour for rolling

For the Topping:

  • 2 tbsp tomato paste

  • 2 garlic cloves (chopped)

  • salt and pepper

  • 1 field tomato

  • 1/2 red onion

  • 1 tbsp black greek olives

  • Pinch pizza seasoning, or red pepper flakes

  • 4-5 kale leaves (stems removed, and chopped)

  • grated parmesan (or vegan parm)

  • more salt, pepper and pizza seasoning

Directions:

  1. Preheat oven to 460F.

  2. Mix together your flour salt and yeast. Pour in the olive oil and warm water and knead together using your hands until it forms a round doughy ball that's soft in texture.

  3. Sprinkle flour over your pizza stone and roll out the dough evenly onto the stone. You can also use your hands to help spread by gently pressing and pushing outward.

  4. In a bowl add your tomato paste, garlic, and a pinch of salt and pepper. Mix together with a spoon. Then spread the sauce over the pizza dough getting close to the ends.

  5. Thinly slice your field tomato and red onion and layer the veg onto the pizza.

  6. Top with olives, and sprinkle on some pizza seasoning, or chili flakes.

  7. Place pizza in the oven for 12-15 minutes, or until cooked.

  8. Remove from oven and layer on your chopped kale. Sprinkle with fresh parmesan (or vegan parm) and place back in the oven for 1 minute, or until the parm melts. (You can add as much parm as you want, depending on how cheesy you prefer!).

  9. Remove from oven. Sprinkle with salt, pepper, and more pizza seasoning.
