Hummus - you just can't live without it. When was the last time you opened a fridge and didn't find this tasty spread inside? I'm surprised they haven't invented a fridge with a hummus dispenser yet. "Nix the ice cube dispenser please, I'll take the hummus instead."
This hummus is a top contender of my favourite apps/snack recipes that I continue to make over and over. It's soooo easy to make and the ingredients are minimal. Another great thing about it is that you can't make any mistakes - if you love lemon (like me) squeeze in more juice! Not a fan of garlic? Take out a clove or two. It's a fool proof recipe that's stellar every time.
I started making my own hummus a few years ago, and BOY what a difference it makes to store bought. If you haven't tried homemade hummus you don't know what you're missing. It's so creamy, and the flavours are pure and fresh. I must warn you though that once you've tried homemade it's near impossible to go back to pre-packaged brands. For a while, my friends referred to me as the "hummus snob," which I really can't argue with. But since they've tried my recipe they too find themselves in the same dilemma! Thank goodness it's so easy to whip up a fresh batch of this stuff.

You need this HUMMUS
Serves 6
Ingredients:
1 1/2 cups chickpeas
1/2 cup tahini
1/2 cup extra virgin olive oil (evoo)
2 juicy lemons
2 garlic cloves
pinch salt
splash of water (if needed for better blending)
Directions:
In a blender add your chickpeas, tahini, and evoo
Juice your lemons and add
Chop your garlic and add, and toss in a pinch of salt
Blend on high until smooth and creamy (approx. 1-2 minutes). (If you don't have a high performance blender you may need to add a splash of water to help blend, or if you love lemon like me you can add more juice!)
