The BEST Guacamole

This recipe is my "go to" when having soirees avec mes amis! I've been making this guacamole for years now, and it has become the ultimate crowd pleaser. Every time I host parties this guacamole never fails me. Actually my guac recipe has earned it's own name amongst my friends as "Hannah's Guac." They even refer to it by this name at parties outside our circle. You know you have a killer recipe when..!
Next time you host a party try making this guac! I'm sure it will be a big hit. This recipe is perfect because it's really easy to prepare and is essentially fail-proof. There are only a few key tips to making this flawless guac.
1. Make sure to buy the avocados a few days prior
Yes, unfortunately you have to plan a tad ahead for this recipe, and get your avocados a few days in advanced. In my experience you seldom find avocadoes ready to eat the day you buy them (only in a perfect world). If you buy your avocados early then they are sure to have time to ripen - 2-3 days is enough!
2. Citrus is your friend
You can use either lemon or limes for this recipe. Typically people use limes for guac, but lemons are a staple in my kitchen and so I always end up using them instead. It tastes just as good! The rule of thumb: citrus is your friend. I use 2 lemons in my recipe, because the citrus adds an invigorating and refreshing taste. It's what makes your guests go back for more. Also, citrus will stop the guac from browning so it remains a vivid green throughout your party.
3. Saran before you serve
Another way to keep your guac vivid green is to saran wrap it before you serve it! This is a TOTAL blessing because I can make my guac in the morning and have the rest of the day to prep for the party. Here's how to do it - prep the guac and put it in your party bowl, then apply saran wrap directly to the surface of the quac getting into all the nooks and crannies so no air can access it. When ready just peel off the wrap and VIOLA. You've got the BEST guacamole!
Finally, one more tip is to taste while you make. This way to can adjust the taste to how you think your guests will like it! Some like more cilantro than others, some spicier, and some more garlicky. Typically I read the audience and make what I think they prefer more. But just know that this recipe always tastes good. As long as you include at least some of each ingredient it's going to be delish. Make sure you've got copies of this recipe because your friends will be begging for it. :)



The BEST Guacamole
Serves 4-6
Ingredients:
4 avocados
2 green onions
2 garlic gloves
2 lemons
1/4 cup cilantro (or to taste)
1/2 tsp ground sea salt
1-2 jalapeños (or to taste)
Directions:
Begin by peeling your avocados and removing the pit. Add the avocado to a large mixing bowl.
Finely chop your green onion and add to the bowl.
Finely chop your garlic and add.
With a little pressure, roll your lemons on your counter top to soften. Cut through the centre of the lemons and juice. Add juice directly to the bowl.
Add 1/4 cup chopped cilantro to the bowl.
Sprinkle in your sea salt.
Chop your jalapeños and add to taste.
Using a fork, mix the ingredients together until you've reached a desired consistency.
