Chocolate Coconut Bliss Bars

A problem I find living in France is that everywhere you look there is patisserie after patisserie, and each is filled with unbelievably decadent sweets! Most people would love this. But for me, it's like Hansel on the loose! I just can't seem to pass without buying something to satisfy my sweet tooth, and sooner or later it becomes routine.
My fiance, Mitch, will attest to the fact that I have a MAJOR sweet tooth and saying no to this craving is a big struggle. I'll often make an excuse that I'm actually buying dessert for Mitch, and enevitably end up munching the entire thing before he knows I even bought it. It's really not my best quality...
I figured that my solution to avoid patisseries altogether is virtually impossible. To do so, I would have to turn algoraphic and have all my groceries delivered. Which is no way to live. So instead, I thought I may as well embrace my sweet tooth craving, but to start treating it to guilt-free solutions!
Say hello to these Chocolate Coconut Bliss Bars. They are the perfect guilt-free solution. All the ingredients are wholesome and the chocolatey taste is so decadent they make healthy look sinful. You will definitely feel satisfied with just one square and a cup-a-tea! What I also love about this recipe is all the ingredients are really basic and easy to find in your pantry. There are no fancy ingredients going on here. So, if you're feeling that mid-day craving, or after dinner sweet-tooth, you can easily gather everything needed to whip these together.
Whats even better is that my Fiance also loves them! Yes, the ability to be satisfied with just one square allows these treats to last more then 24 hours, so Mitch also gets the chance to enjoy them too!

Chocolate Coconut Bliss Bars
Makes 12 bars
Ingredients:
2 cups pitted Medjool dates
¾ cups raw cocoa powder
¾ cups unsweetened shredded coconut (plus more for topping)
¼ cup pumpkin seeds
2 tbsp maple syrup
2 tbsp water
1 tsp salt
Directions:
Toss all ingredients into a large food processor. Process until smooth (1-2 minutes).
Line a baking dish with parchment paper and transfer dough into the dish (10x7-inches).
Spread the doughy mixture out with your fingers to cover the entire surface area, then gently press with the back of a measuring cup to make the bars level.
Sprinkle the top with shredded coconut and press gently again.
With a sharp knife, cut into squares.
